CLASS DETAIL:
Where the sauce is the food! Moles are elaborate concoctions of chiles, nuts, spices, fruit, and sometimes chocolate, that, made properly, are devastatingly sensuous and whole. We’ll see how care and attention to the details earn these Mexican classics their reputation. Along with a couple of famous Oaxacan moles we’ll cook a pipian, a green chile-based mole thickened with ground pumpkinseed.

• Spicy Pumpkinseed Pipian with Grilled Salmon
• Sweet Manchamanteles Mole with Pork Tenderloin
• Coastal Rice with Plantains
