CLASS DETAIL: Expeditions bring students together to assemble a five-course dinner from the ground up. We begin with a shopping excursion to a large Mexican grocery. After shopping, we take three hours to create and coordinate the timing of a Southwestern and Mexican fiesta. In the last hour of class we sit down to this party, complete with music, and enjoy the results of our efforts.
MEAL PREPARED:
• Smoked Chicken, Hominy and Poblano Soup
• Ceviche with Salmon, Olives, Orange and Avocado
• Sopes with Salsa, Queso Anejo and Cilantro
• Seared Skirt Steak with Tomato, Garlic, and Roasted Chile
• Banana Custard with Mango Sauce
